I love cornbread. I think it’s delicious enjoyed plain, as a boat for chili to travel on to my mouth or to accompany some chickpea or cauliflower scramble into my belly.

This recipe takes about 5 minutes to compile and then maybe 20 to bake. Easy, nutritious and rewarding!!




1 cup flour

1 cup cornmeal

1 Tbs baking powder

pinch salt

paprika to taste


3/4 cup non dairy milk

1/2 c applesauce


1 C corn kernels (highly suggested!)

1/4 C maple syrup


Mix dry and add milk and applesauce to the mixture. I absolutely love the extra texture that the kernels add, frozen or fresh work! I don’t need the extra sweetener, but feel free to add maple syrup if you need it sweeter.

Pour into a non stick 8 by 8 pan (or lightly coconut oil the pan) and bake at 400 for about 20 minutes or until it’s turning light brown and cracking slightly!
