Vegan Banana Pancakes

I listen to the Jack Johnson song “Banana Pancakes,” every time I make pancakes. I love the song and I love banana pancakes, so it’s a win-win for everyone (and for those in my vicinity who get to eat the pancakes). Here’s a really simple and delicious pancake recipe!

Ingredients:

Wet:

one very ripe banana

drizzle of coconut oil

2/3-3/4 C non-dairy milk

optional for sweeter: 2 chopped dates or 1-2 Tbs. liquid sweetener

Dry:

1 1/2 C buckwheat flour

1 tsp baking powder

dash of cinnamon

pinch of salt

Instructions:

mix wet and dry ingredients separately and then together. Heat skillet with coconut oil and cook pancakes! You can enjoy them plain, with coconut yogurt, crushed walnuts, maple syrup, nut butter, fruit compote etc etc!

Pancakes are perfect for breakfast, brunch, dinner or a midnight snack. It’s hard for anyone to say no to pancakes. So say YES to these healthful pancakes and start heating up that griddle!
